Zucchini Tortillas

PALEO     |     Gluten and Grain Free     |     Dairy Free     |     Sugar Free

These tortillas are such a good, healthy substitute for regular tortillas. Really easy to make if you have a food processor or vitamix. Recipe was inspired by Dr. Josh Axe.

Ingredients

3 cups zoodles (zucchini noodles)

1/2 cup coconut flour

1 cup + 3 tbsp arrowroot flour

3 eggs

1 tsp cumin

1 tsp paprika

salt and pepper to taste

Instructions

1. Preheat oven to 350 degrees F.

2. Put all ingredients into a food processor or vitamix. This really helps get the tortillas smooth and fluffy.

3. Scoop 1/2 cup measurements onto greased baking sheet and flatten down into thin, circular tortilla shapes.

3. Bake for 35-40 minutes or until the edges are brown.
