Homemade Banana Bread


Prep Time = 10 minutes

Cook Time = 45-50 minutes (test)

TOTAL Time = 60 minutes

Very moist and delicious banana bread that tastes just like the unhealthy kind!


3-4 very ripe bananas

1 egg

3 Tbsp oil

1 tsp vanilla

1/3-1/2 cup maple syrup (can use honey + stevia to substitute)

2 cups gluten free flour (we usually use King Arthur All Purpose Baking Mix)

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips (optional, we use Lily’s dark chocolate) 


Pre-heat the oven to 350 degrees. Mash 3-4 very ripe bananas in a bowl. Add 1 beaten egg, 3 tablespoons oil (melted coconut oil, grape seed oil, extra light olive oil, avocado oil, or melted Earth’s Balance buttery spread), 1 tsp vanilla, and 1/3-1/2 cup maple syrup or coconut sugar (depends on how sweet you like it). Stir until well combined.

In another bowl combine 2 cups of gluten free flour (Can use Arrowhead Mills), 1 tsp baking powder, 1 tsp baking soda, and 1/2 tsp salt.

Add the flour mixture to the banana mixture and combine well. Fold in the chocolate chips if you’re adding them. Do not over stir. Pour into greased bread pan. Cook for 45-50 minutes. Test with knife, done when comes out clean.

Note: If you are using melted coconut oil it helps to keep the bowl on top of the oven where it is warm so that the coconut oil does not re-harden.
